Ice Cream Bread

Ice Cream Bread sounded way to simple to be real: ice cream + flour = bread? What the fork, right?

And if you like weird comfort food, you’ve got to check out Mock Apple Pie.

My daughter picked strawberry ice cream for us to try. The first loaf was “meh”, I wasn’t impressed!

**Round Two: Better Results*

Then came loaf #2 – I’m sharing here. If you’ve never tried strawberry ice cream bread before, this version is a great place to start.

It looks like bread, but tastes like cake, and the texture is somewhere right in the middle. My kids said this version was way better than the first attempt, and honestly…..I agree. It’s still a weird recipe, but that’s why it belongs here on WhatTheForkRecipes.

A weird-but-wonderful quick bread made from melted strawberry ice cream and flour – with a few optional upgrades (like yogurt, almond extract, and white chocolate chips) that make it even better. This loaf looks like bread, tastes a bit like cake. No eggs, no oil, but flavorful.

Honest Thoughts: This version of strawberry ice cream bread was way better than the first one I tried. It actually had flavor this time. It tasted like cake but still looked like bread – and the texture was bread-like too, not soft like cake. Kind of strange, but honestly? I liked it. My kids liked it too, which is saying something. The ice cream we used was Umpqua Strawberry ice Cream.

Fork Fact: Ice cream bread got popular during the early days of food blogging – partly because people couldn’t believe it worked. Turns out, the ice cream replaces the fat, sugar, And liquid in a normal quick bread recipe. It’s kitchen science disguised as dessert!

This recipe is weird in all the best ways. it looks like bread, tastes like cake and starts with melted ice cream – what the fork, right? if you bake this one, let me know how it turns out.
