Then came loaf #2 – I’m sharing here. If you’ve never tried strawberry ice cream bread before, this version is a great place to start.
It looks like bread, but tastes like cake, and the texture is somewhere right in the middle. My kids said this version was way better than the first attempt, and honestly…..I agree. It’s still a weird recipe, but that’s why it belongs here on WhatTheForkRecipes.
Strawberry Ice Cream Bread
Ingredients
Method
- 1. Preheat oven to 350℉. Grease a loaf pan or line with parchment paper.
- 2. Let strawberry ice cream melt until pourable.
- 3. Stir in self-rising flour (or all-purpose flour and baking powder and salt).
- 4. Add yogurt and almond extract. Stir in gently-do not overmix
- 5. Fold in the white chocolate chips, if using.
- 6. Scoop out batter into prepared loaf pan. Batter will be thick. Smooth the top.
- 7. Bake for 40-50 minutes, or until toothpick comes out clean.
- 8. Cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling.

Cream Cheese Glaze (optional)
- 2 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1-2 Tbsp of milk or cream
- 1/4 tsp almond or vanilla extract
(optional)
- Whisk the cream cheese until smooth.
- Add powdered sugar and stir well.
- Mix a little milk at a time until it reaches a pourable consistency.
- Drizzle over cooled loaf and let it set for 5-10 minutes before slicing.

Honest Thoughts: This version of strawberry ice cream bread was way better than the first one I tried. It actually had flavor this time. It tasted like cake but still looked like bread – and the texture was bread-like too, not soft like cake. Kind of strange, but honestly? I liked it. My kids liked it too, which is saying something.
