Mock Meatloaf

(Cottage Cheese and Walnut Loaf)

This Mock Meatloaf is a vintage meatless loaf made with cottage cheese and walnuts-one of many clever “mock” dishes found in mid-century community cookbooks.

Despite the unusual ingredient list, this loaf slices cleanly and serves much like traditional meatloaf.

Mock Meatloaf

Ingredients
  

  • cups cottage cheese
  • 1 cup bread OR breadcrumbs OR cracker crumbs
  • 1 cup walnuts, chopped
  • ¾ cup celery, chopped
  • ½ cup green pepper, chopped
  • ¼ cup onion, chopped
  • 3 eggs
  • 1 Tbs oil
  • ½ tsp salt
  • ¼ cup sunflower seeds, chopped OR sesame seeds
  • parsley
  • oregano
  • paprika

Method
 

  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients in a bowl. Use only half of the seeds (sunflower or sesame).
  3. Using the oil, grease a loaf pan or casserole dish. Season the top of the loaf with parsley, oregano, paprika and the rest of the seeds.
  4. Bake for 45-60 minutes.

Notes

  • This freezes well.
