Pig Cake

Pig cake is one of those classic church desserts with a funny name and a surprisingly light, fruity bite. It’s made with a yellow cake, mandarin oranges and topped with cool whip, pudding and pineapple. Simple, nostalgic and perfect for potlucks.

In fact, this cake was a request from my daughter. She asked me to make it for her 16th birthday.

Ingredients
  

  • 1 box yellow cake mix
  • 1 sm mandarin oranges, drained
  • 1 8oz cool whip
  • 1 can crushed pineapple
  • 1 sm box instant vanilla pudding

Method
 

  1. Preheat oven to 350 degrees
  2. Prepare yellow cake mix, as per directions on the box. Add mandarin oranges to cake batter.
  3. Cool cake completely.
  4. For cake frosting; mix whipped topping, crushed pineapple and instant vanilla pudding. Spread on cake.
  5. Store covered in the refrigerator.
