Method
- Heat oil in a saucepan over medium heat.
- Add uncooked rice and toast for 2–3 minutes, stirring frequently, until lightly golden.
- Stir in tomato sauce and spices. Mix well.
- Add water (or broth) and bring to a boil.
- Reduce heat to low, cover, and simmer 15–18 minutes until liquid is absorbed.
- Remove from heat and let sit covered 5 minutes.
- Fluff with a fork and serve.
- Makes about 3 cups cooked rice (4 servings as a side).
