Mock Chow Mein

Ingredients
  

  • 1 lb ground beef
  • 2 cups celery
  • 1 onion, chopped fine
  • ¼ cup soy sauce
  • ½ cup uncooked rice
  • 1 can cream of mushroom soup
  • 1 can water
  • 1 can bean sprouts, drained

Method
 

  1. Preheat oven to 350 degrees. Grease a 9x13 baking dish.
  2. Brown ground beef, celery and onion. Add soy sauce.
  3. In a large bowl, combine rice, cream of mushroom soup, water and drained bean sprouts.
  4. Bake uncovered for 1 hour. Loosely cover with foil and continue baking another 30 minutes, until rice is tender.

Notes

This is a classic mid-century "mock" casserole designed to mimic restaurant-style chow mein using pantry staples.
