Method
- Preheat oven to 375°F. Grease a tube pan.
- Cream together butter, sugar, and honey.
- Beat eggs until frothy. Add milk to eggs, then add to creamed mixture.
- Sift flour and baking powder together; add to mixture and stir until smooth.
- Chop raisins, figs, and almonds and fold into the batter.
- Add spices to taste.
- Pour into tube pan and bake for about 30 minutes, or until a toothpick comes out clean.
Notes
This cake has a dense vintage texture similar to a raisin-spice loaf.
You can add more spices if you want it to taste like a Christmas cake.
Wonderful served warm with butter or a drizzle of honey.
