Ingredients
  

  • 1 lb ground beef
  • 1 sm onion, chopped
  • 3 tbsps olive oil
  • 1 sm can sliced mushrooms, drained
  • 1 pkg frozen spinach, cooked
  • 6 eggs, well beaten
  • salt and pepper to taste

Method
 

  1. In a skillet brown ground beef and onions. Add mushrooms and spinach. Stirring frequently.
  2. Gradually add beaten eggs to the skillet. Mix to combine.
  3. Salt and pepper to taste, once the eggs are cook through.
